My top spots to shoot in Amsterdam are listed below also inculded is a google maps link to the spot so its easy for you to find yourself.
Here there are two spots for the price of one. One is looking over the canal towards the houses and the reflections in the water and the other one is towards the chutch that peeps over the houses.

I AMSTERDAM SIGN / RIJKSMUSEUM
This spot is very well known but is a must if your in Amsterdam. Its always crowded even when I went first thing in the morning at sunrise there were people around. Also when I went the had converted the pool of water into a ice rink which made for a different type of image.

OVER THE CANAL
I found this spot whilst walking near my hotel and it made for a nice image of the canal with an interesting church at the end.

BRIDGES AND BOATS
Two shots now from the same location so this is a two for one. The first is a shot with a bridge passing over and the second is with a boat docked in the canal itself.

This is the only high up shot I got of the Amsterdam skyline but its a good one as you get to see alot of the city from a different kind of viewpoint. Its from the Hilton Skylounge bar in the Hitlon Hotel.

MY FAVORITE VIEW
Last but not least is my favorite view in Amsterdam and I would think the most photographed view in Amsterdam is of the interscection of bridges over the Canals.
